Chia Pudding with Strawberries

Yes, if you are thinking about that old chia pet commercial - “Cha cha chia…” these are the same seeds! If you haven’t heard, turns out chia seeds are super good for our bodies, full of fiber and omega 3’s and they are easy to add to a number of recipes. My favorite thing to do with them takes all of 5 minutes, almost no effort, and only a few ingredients - Chia Pudding.

Chia Pudding
Makes 4 cups of pudding
1/2 cup chia seeds (you can use less if you want it less thick)
3 1/2 cups water
1/4 cup coconut milk (more if you like it richer)
Sweetener of your choice to taste - it is also good without sweetener
A few spoonfuls of chopped fruit or berries per serving
1 quart sized jar with lid (like a pasta sauce jar)

Chia seeds plump up when mixed with water, that’s how this simple recipe works!

Place chia seeds in a quart sized jar and fill with water, leaving about 2 inches empty from the top of the jar (this should be approximately 3 1/2 cups of water). Put the lid on and shake the jar a few times so the seeds don’t stick together. Shake it a few more times over the first minute the seeds are soaking. After about 5 minutes the seeds should have fully absorbed the water. Add coconut milk and sweeten as desired. Serve immediately with fruit on top or mixed in, or chill and serve later. Enjoy!
