Latkes w/ Apple Pomegranate Slaw

Now you know I love applesauce with my latkes, but when kitchen inspiration hits, I do not deny. This tart apple slaw is a great match for some wonderfully fried latkes. I used a mandoline to finely shred and slice these ingredients, but a box grater or sharp knife can work well too. The main gist: thinly slice or shred some apples, celery, and red onion. Toss with some vinegar or lemon juice, a little salt and sugar, and mix in some fresh pomegranate seeds. This recipe works well with substitutions, so feel free to use some pears, or skip the pomegranate if you don’t have one…

Apple Pomegranate Slaw

2 apples
2 stalks celery
1/2 medium red onion
1/2 fresh Pomegranate
3 to 4 Tablespoons vinegar (cider, white, or rice) OR lemon juice
1 teaspoon salt
1 teaspoon sugar (optional)

  1. If using a mandoline (pictured below) use thin julienne attachment and shred apples into fine matchsticks. You can also use a box grater to shred or a knife to cut very thin matchsticks or even a small dice.

  2. thinly slice celery and red onion with mandoline (blade only) or with a sharp knife. Remove the seeds from the pomegranate half using this easy technique.

  3. Toss everything with vinegar (or lemon juice) salt and sugar (if using) and let sit for 15 minutes to marinate, tossing occasionally. Taste and adjust seasoning as desired. Cover and let sit at room temperature if you will be eating it soon, or store in a closed container in the fridge for 3 to 4 days. Serve with hot potato latkes and enjoy!
